Amandas Tabbouleh Recipe
Tabbouleh salad
1 cup bulgur wheat
1 cup boiling water
1/4 cup lemon juice
1 tablespoon olive oil
1 (.19-ounce) envelope instant chicken-flavored broth
2 big tomatoes, finely chopped
1 cup finely chopped green onions
2 tablespoons minced fresh mint
2 tablespoons minced fresh parsley
1 clove garlic, minced
1 teaspoon salt
1/4 teaspoon freshly ground pepper
Fresh parsley sprigs (optional)
Combine first 5 ingredients; let stand 1 hour.
Add tomatoes, onions, and next 5 ingredients to bulgur mixture, stirring
well. Spoon mixture evenly into tomato cups. Chill thoroughly
before serving. Garnish with fresh parsley sprigs, if desired. |
