11/3/2003 Bruschetta Chris & George creations Makes 8 slices (2 servings) :-) 1 Giant Eagle Italian loaf, comes in brown bag, about $1.50. 3 cloves garlic, very finely chopped 1 tomato, sliced or diced 1/2 container feta oregano 6 oz mozzarella Slice bread into 1/2 inch slices. Arrange on cookie sheet. Combine mozzarella, oregano, feta, and garlic, mix. Arrange tomatoes on bread. Cover tomatoes with cheese mixture. (This helps to keep the tomatoes from moving around while eating.) Heat oven to 400. Bake until cheese is melted, or to desired crispiness. We usually turn off the oven, but leave the extra pieces in the stove until we are ready to eat them, so they stay warm and become a bit crispier. bake on high shelf
