Cauliflower Soup Recipe
Easy Cauliflower Soup

Ingredients
* 1 chopped cauliflower
* 4 cups chicken stock
* 1 tablespoon butter
* 1 cup full milk (or any, 1% is fine)
* 1 cup grated cheese (cheddar, or experiment -- something tangy)
* 1/3 cup single cream
Method
1. Simmer cauliflower in chicken stock and butter until cauliflower
is very soft (about 30 min)
2. Add milk and cheese and then blend until smooth (hand blender
works GREAT here, everybody should have one)
3. Add salt and pepper to taste.
4. Heat to just below boiling.
5. Add cream.
6. Serve in warmed bowls, garnish with some grated cheese and
parsley.
