Chicken Curry Noodles
Ingredients - 1. 1bsp sunflower oil 2. 1 onion - sliced 3. 1 garlic clove - crushed 4. 1 inch of ginger root - peeled and grated. 5. 1 bunch of spring onions - sliced 6. 500g / 1 lb of chicken fillet, skinned and cut into bite-sized bits 7. 2 tbsp mild curry paste 8. 450ml / 2 cups coconut milk 9. 300 ml / 1.25 cups chicken stock 10. 250g / 9 oz chinese egg noodles 11. 2 tsp lime juice 12. salt and pepper to taste 13. basil sprigs for serving
Proceedure - Heat Oil in Wok Add onion, garlic, ginger root and spring onions. Stir-fry 2 minutes or until soft Add Chicken and curry paste, and stir-fry until golden. Stir in coconut milk, stock, salt and pepper and mix well. Bring to the boil and add noodles. Simmer for 6-8 minutes or until noodles are just tender. Add lime juice and any additional seasoning. Serve in bowls with basil springs.
