Chicken Kiev
Ingredients 1/4 cup butter 1 tablespoon fresh chives or parsley 1/8 teaspoon garlic powder 3 whole chicken breasts (2.25 pounds or so). 3 cups cornflakes, crushed 2 tablespoons chopped fresh parsley 1/2 teaspoon paprika 1/4 cup buttermilk or milk Wooden pick.
Method Mix butter, chives and garlic powder. Shape into a rectangle (3"*2") and freeze until firm. Heat oven to 425F. Grease square 9"*9"*2" pan. Cut breasts in half. Flatten each half to 1/4-inch thickness. Cut butter mixture into 6 pieces and place a piece in the centre of each half breast. Fold over butter and secure roll with wooden pick Mix cornflakes, parsley and parpicka. Dip chicken into milk and then coat evenly with cornflake mixture. Place chicken seam-side down in baking pan. Bake for 35 minutes or until juices run clear.
