Chicken Lemon Recipe
Lemon Chicken

Ingredients -
6 to 8 pieces of frying chicken (breast, leg, thigh)
1 whole lemon
1/3 cup flour
1.5 teaspoons salt
1/2 teaspoon paprika
4 tablespoons salad oil or shortening
2 tablespoons brown sugar
1 lemon, thinly sliced
1 cup chicken broth
2 sprigs fresh mint

Method
Wash chicken and dry
Grate lemon peel
Squeeze lemon juice (of 1 lemon) over chicken
Batter chicken in flour, salt and paprika and salad oil.
Place in casserol pan.
Sprinkle grated lemon peel over chicken, add brown sugar and cover with thinly sliced lemon.
Pour in broth and place mint on top.
Cover and bake (375F) until chicken is tender (45 minutes approx)
Remove mint before serving.
